LENTIL SALAD

Shout out to Trader Joe’s for this incredibly easy and scrumplicious recipe. And healthy! This tastes so good, it’s easy to forget that part.

One of my friends introduced us to this delectable salad/dip/spread a year or so ago at a get together, and as she whipped it together in front of our eyes, I remember being extremely  impressed at the minimal ingredients required and big flavor it produced. The people at Trader Joe’s are geniuses, that’s for sure. I tossed this together for a BBQ this past weekend, and it was a hit. I had forgoten how tasty it was, and need to think about making some just to snack on during the work week.

Ingredients:

  • 1 package Trader Joe’s Steamed & Fully Cooked Lentils, rinsed to remove extra sodium
  • 1 package Trader Joe’s Crumbled Feta
  • 1/2 container (7.25 oz) Trader Joe’s Bruschetta Sauce (but I think I used the whole container, oops!)

The players. I opted for Trader Joe’s multigrain chips to serve as my dipping vessel.


Rinse those lentils thoroughly to get rid of any extra sodium that you probably don’t need.

Open the feta…

Dump the feta.

The recipe only calls for 1/2 the container of bruschetta sauce, but I used all of it. I love tomatoes. Next time, I might drain out some of the oil/liquid in the sauce before dumping it all in, though, as I felt the final product was a bit liquidy. It still tasted fine, just one of those appearance things when you’re bringing a dish to a get together and want it to look as great at it tastes.
